Fosse-Sèche: Magnificent estate dating from the Middle Ages, organically farmed.

A place where respect for flora and fauna is a priority: birds, animals, insects, batrachians and bats have found refuge here, enabling the reconstitution of an ecosystem.

Passionate twin brothers and their girlfriends create wines with a unique identity from an exceptional terroir.

The estate also has its own apiary, under the supervision of Julie, a budding beekeeper, on the edge of the Verger de la Chapelle, a conservatory orchard that we planted in 2022.

Description

For over 10 years, we have planted 4,500 trees, including a conservatory of old fruit varieties, and every year we sow over 30 varieties of flowers to the delight of our bees.

It's in this exceptional setting that they gather and produce a spring honey with a refined, delicately flowery taste.

Spring honey vs. summer honey: what are the differences?

The spring honey is the first of the year. It is generally sweeter, creamier and clearer, with light floral notes and faster crystallization. Made from the first flowers to bloom (dandelion, hawthorn, fruit trees, etc.), it has a delicate, subtle taste.
Summer honey, on the other hand, comes from later flowering (lime, chestnut, lavender...). It is often darker, fuller-bodied, with a more liquid texture and slower crystallization. A rare and precious honey
