I'm often called the Fruit Cook, and in the end, that's just like me, because anything I find in nature can end up in my basins.

Here, I wanted to break the mould of jam, often seen only as a product to spread for breakfast, whereas it can be a real condiment and reveal a dish.

Tomato jam is a real challenge, because tomatoes are full of water. With Green zébra tomato jam and pineapple, lemon thyme tomato, you'll be surprised by the flavors and pep they offer.

This is more of an idea than a recipe, but you'll love it as an aperitif, brunch or starter.

  • 1 nice Burrata
  • 1 jar of Green Zebra tomatoes
  • 1 jar of pineapple tomatoes, lemon thyme

Preparation

- Slice your tomatoes thinly, carpaccio style. - Sprinkle with fleur de sel and a drizzle of olive oil. - Place the burrata in the middle of your dish You can either add alternating dabs of zebra and pineapple tomato jam, or serve toasted bread topped with tomato, burrata and the tomato jam of your choice.
