Homemade Shortcrust Pastry

  •  250g flour
  • 125g cold butter, diced
  • 80g powdered sugar
  • 1 egg

  • A pinch of salt
  • Jam of your choice (strawberry, raspberry, apricot, etc.)

Preparation

  • In a large bowl, combine the flour, powdered sugar and salt.
  • Add the diced butter and rub in the flour with your fingertips until you obtain a sandy texture.
  • Add the egg and knead the dough until smooth.
  • Form the dough into a ball, wrap in cling film and refrigerate for at least 30 minutes.
  • Preheat your oven to 180°C (gas mark 6).
  • On a lightly floured work surface, roll out the dough to a thickness of about 3-4 mm.
  • Using a cookie cutter, cut out circles of dough slightly larger than your tartlet molds.
  • Place the pastry circles in buttered or parchment paper-lined tartlet molds.
  • Prick the bottoms of the tartlets with a fork.
  • Fill each tartlet with a teaspoon of jam of your choice.
  • Place the tartlets in the oven for about 15 to 20 minutes, until golden brown.
  • Leave the tartlets to cool before serving.
