Ingredients

(Serves 6)

  • 100 g round rice
  • 500 ml whole milk
  • 50 g caster sugar (adjust according to your sugar preference)
  • 50 g dried apricots
  • 1 teaspoon vanilla extract (optional)
  • Zest of one lemon (optional)
  • A pinch of salt
  • Apricot jam

Preparation

  • Rinse the rice in cold water until the water runs clear, then drain.
  • In a saucepan, bring the milk to the boil over medium heat.
  • Add the drained rice to the pan with a pinch of salt.
  • Stir and simmer over low heat for about 20-25 minutes, stirring frequently to prevent the rice sticking to the bottom of the pan.
  • Meanwhile, finely chop the dried apricots.
  • When the rice is almost cooked and the milk has thickened, add the powdered sugar and chopped dried apricots to the pan.
  • Mix well and simmer for a further 5 minutes.
  • If using, add vanilla extract and lemon zest to flavour the rice pudding.
  • Once the rice is cooked to the desired texture and the mixture has thickened, remove the pan from the heat.
  • Divide the dried apricot rice pudding between individual bowls or ramekins.
  • Allow to cool slightly before serving, or serve hot as preferred.
  • You can also garnish the rice pudding with a few extra pieces of dried apricot for an elegant presentation, and top with apricot jam.
