Ingredients

- 100 g round rice
- 500 ml whole milk
- 50 g caster sugar (adjust according to your sugar preference)
- 50 g dried apricots
- 1 teaspoon vanilla extract (optional)
- Zest of one lemon (optional)
- A pinch of salt
- Apricot jam

Preparation
- Rinse the rice in cold water until the water runs clear, then drain.
- In a saucepan, bring the milk to the boil over medium heat.
- Add the drained rice to the pan with a pinch of salt.
- Stir and simmer over low heat for about 20-25 minutes, stirring frequently to prevent the rice sticking to the bottom of the pan.
- Meanwhile, finely chop the dried apricots.
- When the rice is almost cooked and the milk has thickened, add the powdered sugar and chopped dried apricots to the pan.
- Mix well and simmer for a further 5 minutes.
- If using, add vanilla extract and lemon zest to flavour the rice pudding.
- Once the rice is cooked to the desired texture and the mixture has thickened, remove the pan from the heat.
- Divide the dried apricot rice pudding between individual bowls or ramekins.
- Allow to cool slightly before serving, or serve hot as preferred.
- You can also garnish the rice pudding with a few extra pieces of dried apricot for an elegant presentation, and top with apricot jam.
