In the enchanted world of gourmandise, every piece of chocolate is a story, a sensory journey that begins at first contact with the palate. Today, we're delighted to invite you to explore the exquisite world of Chef Stéphan Perrotte's chocolate bars.

Why did you launch a chocolate range?

Firstly, because I'm a great gourmand and I love chocolate!

Secondly, because the idea was to start offering another range of products to complement the opening of our Angers boutique, while remaining initially in the gourmet segment with a caramel beurre salé-filled bar and a praline-filled bar.

In a second phase, we brought out fruit-filled bars, because fruit is the basis of our expertise.

What are the products in this range?

Initially, this range consisted of two products: a dark chocolate / caramel beurre salé bar and a milk chocolate / praline bar.

The aim is to make the product tasty and reassuring.

We have since extended the range to include fruit-filled bars, which can also be found in our products:

  • Dark chocolate orange
  • Dark chocolate raspberry
  • Dark chocolate yuzu
  • Dark chocolate blackcurrant

So this range is essentially made up of fruit forage, why did you choose this type of combination?

Given that the basis of our expertise is fruit, and that in 2015 I had already tested several recipes for fruit-based preparations with Grand Cru chocolate combinations (for example, raspberry with Cuban chocolate, pear with Venezuelan chocolate...), I thought it would be interesting to bring a gourmet, fruity side as well as a play on texture to our tablets.

This range also consists mainly of dark chocolate. Will you be releasing new bars with a chocolate-milk coating?

It's essentially composed of dark chocolate, but it's above all the taste pairings that have guided this choice.

We do, however, have the milk chocolate praline bar.

However, I'm not closed to milk chocolate, we'll just have to find the right combination, balance and product.

In addition to chocolates, you've also launched puffed chocolate balls. Do you plan to offer this product with a half-chocolate/half-fruit coating, as you do with caramels?

The puffed chocolate balls have been designed to be highly addictive.

You open a jar on the desk or in the car, and consume it immediately! It's a snacking product.

As with the tablets, the idea is to create a reassuringly gourmet product. We'll then move on to the fruity parts.
