World Jam Champion 2022 - Second to Chef Stéphan Perrotte
What is your mission at Maison Perrotte?
I'm Mr Perrotte's second in command (right-hand man). My job is to manage the team, but I'm also responsible for cooking and preparing orders.
What prompted you to try your luck at the World Jam Championship?
I wanted to find out how good my jam was. I wanted to put my work to the test in a competition.
Mr. Perrotte's encouragement, and that of the whole team, was a great boost.
What do you think made the difference?
Without a doubt, the choice of fruit and combinations. I've used some fruits that nobody else has entered for the championship.
What's next? What next?
The title doesn't change my objectives. I want to continue to grow within Maison Perrotte, with the whole team, and create new recipes. There are always new things to learn.
Stéphan PERROTTE
After being crowned World Champion in 2015, it's the turn of your second today to take this title. How does it feel?
I feel very proud.
Firstly, because not only do we have the know-how at Maison Perrotte, but we've also been able to pass it on.
Secondly, because this title crowns 5 years of daily investment by my Chef.
Thirdly, I'm proud to have been able to pass on my passion.
Were you in favor of her candidacy? Did you know she was ready?
Of course I was in favor of it, but as I am and always will be in favor of anything that allows people to grow.
That's why Maison Perrotte was created. It's a House, so we're a family, and we grow and evolve with the support of all its members.
In this type of competition, you never know if you're ready, you're (often) proud of the product you're proposing, but the rest is up to you. Courage is above all about going and accepting to be judged for your work.
How did you support Christelle in her application?
The work of transmission began 4 years ago, where every day we accompany and help the members of Maison Perrotte to grow.
Christelle has been receptive to my advice and has continued to grow and improve.
What would you say were Christelle's strengths as a person?
She's impressive in her fighting spirit, her eagerness to learn and to do things well, and what's more, she has an extraordinary memory. She's also kind-hearted and has a strong capacity for self-questioning.
What do you think were the strong points of Christelle's products?
The textures, the balance of flavors and perhaps having dared a product that others didn't.
What's next? What next?
The rest is simple: to win a contest is to have been judged at a given moment.
The next day it's all over, so we get back to work "because we only have doubts and no certainties".
That's why every day we strive to do better than the day before. It's also these values that I pass on to my teams every day. Nothing can be taken for granted.
