Ingredients

- 1 ready-to-use or homemade puff pastry
- 2-3 ripe pears (Williams or Comice type)
- 4 to 5 tablespoons Maison Perrotte quince jelly
- 30 g slivered almonds
- 1 tablespoon brown sugar (optional)
- 1 teaspoon melted butter (for browning)

Preparation
Preheat oven to 180°C (th.6).
- Prepare the pastry: roll out the puff pastry on a baking sheet lined with parchment paper.
- Lightly prick the bottom with a fork to prevent it from puffing up too much.
- Spread the jelly: spread 3 tablespoons of quince jelly evenly over the pastry base.
- Cut the pears: peel the pears, remove the core and cut into thin strips.
- Arrange the pears: place the slices in concentric circles on the quince jelly.
- Add the almonds: sprinkle with slivered almonds and a little brown sugar for a light caramel.
- Browning: brush the edges of the dough with the melted butter.
- Cooking time: bake for 25 to 30 minutes, until the pastry is golden brown and the pears are lightly caramelized.
- Finishing touch: once out of the oven, add 1-2 spoonfuls of cooled quince jelly to give the pears a shiny finish.
