English muffins can be savory or sweet. I like them cut in 2, toasted and then spread with a dab of butter and a delicious jam.
Ingredients
(6 people)
250 grams flour
1 teaspoon sugar
1/2 teaspoon salt
1 sachet dried baker's yeast
40 grams butter
160 ml milk
Preparation
Place the yeast, sugar and warm milk in a bowl or glass.
Mix, then leave the yeast to rehydrate for 10 minutes.
Combine the flour, salt and butter in a bowl or food processor.
Add yeast-milk mixture. Knead for 5 minutes, adding flour if necessary, so that it comes away from your hand.
Stop when the dough is smooth. Cover the bowl with a tea towel for 1 hour. The dough should double in volume.
Flour the work surface and roll out to a thickness of about 1 cm. Then cut out circles using a cookie cutter or glass, about 7 to 10 cm in diameter. Place circles on parchment paper, cover with kitchen towel and leave to rest for 1 hour, to double in size.
Heat a frying pan over low heat without fat.
Place the muffins on top and cook for 5 minutes on each side, until golden brown.
