Dorayaki are small Japanese cakes consisting of two fluffy pancakes filled with sweetened red bean paste, called "anko". Here's a simple recipe for making Dorayaki at home:

Ingredients for the Pancakes :

  • 2 eggs 100 g sugar
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • 200 g flour
  • 1/2 teaspoon baking soda
  • 120 ml water
  • Cooking oil

Ingredients for Forage (Anko) :

  • 200 g red kidney beans (azuki)
  • 100 g sugar
  • A pinch of salt

Preparation

1. Feed preparation (Anko) :

  1. Soak the kidney beans overnight.
  2. Then cook them in water until tender.
  3. Drain the beans, then add the sugar and a pinch of salt.
  4. Cook and stir over a low heat until you obtain a thick paste (anko).
  5. Leave to cool.

2. Preparing the pancakes :

  1. In a bowl, beat the eggs, then add the sugar and whisk until frothy.
  2. Add the honey and vanilla extract and mix well.
  3. Sift the flour and baking soda into the egg mixture.
  4. Add the water gradually while continuing to mix to obtain a smooth paste.
  5. Leave the dough to rest for about 15 minutes.

3. Pancake baking :

  1. Pour a small amount of oil into a frying pan over medium heat.
  2. Pour about 2 tablespoons of batter into the pan to form pancakes about 7-8 cm in diameter.
  3. When bubbles form on the surface, turn the pancakes over and bake the other side until golden brown.
  4. Repeat the process until all the dough has been used up.

4. Assembling the Dorayaki :

  1. Spread a tablespoon of anko over half the pancakes.
  2. Place another pancake on top to form a sandwich.
  3. Press gently to adhere the pancakes and repeat for the others.
