Ingredients

(Serves 6)

  • 1 pure butter puff pastry (round or rectangular)
  • 2 firm-fleshed apples (Elstar, Chanteclerc...)
  • 50 g almond powder
  • 1 egg
  • 40 g soft butter
  • 40 g blond sugar
  • 1 tablespoon crème fraîche
  • A few spoonfuls of "Apple, salted butter caramel & calvados" mixture
  • A little powdered sugar (optional)

Preparation

  • Preheat your oven to 190°C (fan-assisted).
  • Roll out your puff pastry on a baking sheet lined with baking paper.
  • Prick it lightly with a fork.

Prepare the express almond cream:

  • In a bowl, combine the almond powder, soft butter, sugar, egg and cream.
  • Spread the cream in the center of the pastry, leaving a border of about 2 cm.
  • Peel the apples, cut into thin slices and arrange over the cream.
  • Bake for 25 to 30 minutes, until golden and crisp.
  • Once out of the oven, carefully add a few spoonfuls of the "Apple, salted butter caramel & calvados" mixture on top.

It adds fondant, a fruity touch and that delicious calvados aroma.

Serve warm, with a scoop of vanilla ice cream or simply plain.
