A marbled cake is a cake with streaks of different colors, obtained by mixing different dark and light pastes. This paste can contain different ingredients such as vanilla, chocolate, coffee, fruit or spices.
I like to rediscover the memories of my childhood, so I made it with chocolate and vanilla.
Ingredients
(1 x 18 cm cake tin)
For the vanilla marble mixture:
- 3 egg yolks
- 100 g sugar
- 50 g cream 35% fat
- 80 g flour
- 3 g yeast
- 30 g melted butter
- the seeds of a vanilla pod
For the marble chocolate mixture:
- 2 egg yolks
- 60 g sugar
- 35 gr cream
- 40 g flour
- 10 gr Van Houten® cocoa powder
- 2 g yeast
- 15 g melted butter
Preparation
Step 1: Preparing the vanilla paste
Mix yolks and sugar (whiten).
Add the vanilla and cream.
Sift flour and baking powder and add to the mixture. Mix and add melted butter.
Step 2: Preparing the chocolate mixture
Mix yolks and sugar (whiten).
Add the cream.
Sift flour, cocoa powder and baking powder into the mixture. Mix and add melted butter.
Marble dressing:
Line a previously buttered mould with successive layers of vanilla and chocolate.
Place a knob of softened butter in the center of the cake (or butter cut into thin strips)
Bake at 180 degrees for 15 minutes, then 155 degrees for about an hour, taking care to keep an eye on the cake at the end.
For an even more delicious treat, serve with whipped mascarpone cream or spread with orange jam! It's up to you!
