Bakewell tartis a traditional British dessert that perfectly combines the sweetness of red fruit jam and the richness of almond frangipane.
Hailing from the Derbyshire town of Bakewell, this pie is a modern reinterpretation of the famous Bakewell pudding.
It's made from shortcrust pastry filled with a thin layer of jam, usually raspberry or strawberry, topped with almond cream (frangipane) and flaked almonds. Its melt-in-the-mouth texture and delicately sweet taste make it an irresistible dessert.
Ingredients

- 1 shortcrust pastry
- Raspberry or strawberry jam
- 150 g soft butter
- 150 g sugar
- 3 eggs
- 150 g almond powder
- Slivered almonds (optional)
Preparation
Preheating and dough preparation :
- Preheat oven to 180°C.
- Roll out the shortcrust pastry in a tart tin and prick the base with a fork.
Trim :
- Spread a thin layer of jam over the tart base.
- In a bowl, cream the butter with the sugar until light and fluffy.
- Add the eggs one by one, mixing well after each addition.
- Add the almond powder and mix until smooth.
Assembly and baking :
- Pour the mixture over the jam.
- Bake for approx. 25-30 minutes, until the surface is golden brown.
- Leave to cool before unmolding.
- Garnish with slivered almonds if desired.
