This "Once upon a time" set includes :

You've just launched a new boxed set in book format. Why did you choose this format?
I chose the book format because I love books: they're one of the most important elements in transmission. They're often the only thing that remains of people after they've passed on.
What's more, it was a nod to George Sand, to whom the quote "making jam is as serious as writing a book" is attributed.
This "book" is made up of nine 30g fragrances. How did you choose the products that go into it?
These fragrances were chosen because they represent the first 10 years of Maison Perrotte expertise. There are three traditional fragrances, three gourmand ones and three signature ones.
You mention little stories inside each product. Can you tell us more about them?
As with all our jams (fruit-based preparations), I'm always looking for meaning, and content is much more important than form. It's important to me that we can tell our customers stories about our products.
They can come from my memories, from shared discoveries, from ingredients, but above all what I like most is to talk about my producers and their production methods, because they are the most important.
This "book" tells the story of the first ten years of Maison Perrotte. Do you remember the first creation you made?
I especially remember the first fourteen recipes I created. They were all with Anjou wines, but as time went by, I realized that it was difficult to sell jams with alcohol.
I remembered something my grandfather used to say to me: "Before doing what you like, do what sells".
This sentence is important because if we don't sell our products, we'll never have the means to do what we want.
So, on the advice of a fellow jam-maker, Mr Francis Miot, I also introduced classics such as strawberry, apricot and raspberry...
Nevertheless, ten years on, three original recipes remain in our range: fig-pear with Côteaux du Layon, strawberry-raspberry Saumur Champigny and blackcurrant pepper, and 2 apricots with Côteaux du Layon.
