- 1 tbsp. olive oil
- Salt and pepper

Preparation
Chicken marinade :
- In a bowl, combine the Corsican grapefruit jam, honey, soy sauce, minced garlic, mustard, balsamic vinegar, olive oil, salt and pepper. For a fruitier touch, add a little orange zest.
- Mix well to obtain a homogeneous marinade.
Preparing the chicken :
- Place the chicken thighs (or the whole chicken) in a large dish.
- Pour the marinade over it and make sure the chicken is well coated.
- Marinate for at least 30 minutes, or 1-2 hours for more intense flavours.
