For the puff pastry :
- 2 puff pastry discs (approx. 25 cm in diameter)
For the Almond Cream :
- 125 g soft butter
- 125 g powdered sugar
- 125 g almond powder
- 2 eggs
- 1 tablespoon rum (optional)
- A few drops of bitter almond extract
- 1 bean (for the Epiphany tradition)
For Gilding :
- 1 egg yolk
- 1 tablespoon milk

Preparation
Preparation of the Almond Cream :
- In a bowl, mix the soft butter with the sugar until creamy.
- Add the almond powder and mix well.
- Beat in the eggs one by one, then add the rum (if using) and bitter almond extract.
- Mix to a smooth paste.
- Book now.
Assembly of the Galette :
- Preheat your oven to 180°C (gas mark 6).
- Place a disk of puff pastry on a baking sheet lined with parchment paper.
- Spread the frangipane over the pastry, leaving a free edge.
- Insert the bean in a strategic place.
- Cover with the second disk of puff pastry.
- Press the edges together with your fingers or a fork.
Gilding and Decoration :
In a small bowl, mix the egg yolk with the milk to obtain a golden color.
Gently brush the surface of the galette with the gilding.
Using a knife, make decorative patterns on the top of the galette.
Cooking :
Bake the galette in the preheated oven for around 25 to 30 minutes, or until golden and cooked through.
Leave to cool slightly before serving.
Traditionally, the galette is shared among the guests, and whoever finds the bean becomes the king or queen of the day.
